Peanut Butter Oatmeal Ball Recipe

This recipe is a favorite in our home! I received this recipe years ago from someone else, and the original name for it is "Fiber Balls". 

Renaming this recipe as "Peanut Butter Oatmeal Balls" (or perhaps "Oatmeal Freezer Balls") is a much better option in my mind.  

I've never liked the original name for this recipe when sharing it with others because it sounds like this recipe is something you make when fiber is needed (or missing) in your diet! I have no idea who created this recipe (and the name for it!), but since they are healthy and delicious, I've decided to share the recipe on my blog. (and in case you're wondering, yes, we still call this recipe by its original name.) These balls do contain a nice amount of fiber in them.

Every few months, my mom says to me: "Erin, we need to make fiber balls sometime soon!" 

This recipe is a winner in our home. They are great as a "grab and go" snack anytime of the year. These also work well for road trips or packing into a carry on bag when flying. I have a sister who is a flight attendant, and she absolutely loves these! When she visits home, she'll pack some to take along with her (provided we have some in our freezer) in her carry on bag for a yummy, nutritious snack!  

As stated in my blog title, these are made with oats along with peanut butter and other ingredients! We use only real peanut butter. 

The chocolate chips can be substituted with carob chips for a sugar free option. (personally though, we like chocolate chips better!)   
 

Peanut Butter Oatmeal Balls 
(aka: Fiber Balls) 

3 c. oats (rolled or quick oats) 
1 c. peanut butter
1 c. honey
1 c. raisins
1 c. shredded coconut
1/2 c. chocolate chips
1/2 c. wheat bran
1/4 tsp. salt

In a large bowl, mix all ingredients together. (mixing with clean hands usually works best) Roll into small balls, about 1 Tbs. in size. (or a little less) Place balls on a baking sheet, then freeze overnight. Once frozen, store balls inside a Ziploc bag in the freezer. Enjoy!  

Makes about 50 balls. (depending on how small or large you make them) 

My mom and I enjoy making these together. My mom scoops them out into small, Tablespoon size portions, and I roll them with clean hands.
