Salmon Pattie Recipe

This is my Great Grandma's simple, yet delicious recipe for salmon patties. This recipe came from my Grandma (my mom's mother) who got this recipe from her mother.

If you enjoy fish, this is a recipe you might enjoy trying sometime. This recipe is nice with a steamed vegetable or a fresh salad on the side.

This recipe makes 4-5 patties, depending on how large or small you make them. Assuming that each person eats 2 patties, this recipe serves about 2-3 people. For a family of about 5, I would double this recipe. (so that you have about 10 patties)

I made these salmon patties last summer for supper one evening. I steamed broccoli to have with them on the side.

Salmon Pattie Recipe

(serves: 2 - 3 people)

1 (14 oz.) can of cooked salmon

 1 Tbs. dried, minced onion

15 saltine crackers (finely crushed)

1 large egg or 2 small eggs

Instructions: Drain the salmon from can and pull apart.

Take out any bones or skin. Crumble salmon all up into a bowl.

Add the onion and the eggs. (as they are) Then add the crushed crackers.

Squish mixture all together with clean, washed hands.

To cook: Form into small to medium size patties.

In a frying pan, brown patties on both sides with oil on medium heat.

These don't take very long. Serve with white sauce.

White Sauce:

4 Tbs. butter

 4 Tbs. flour

1/2 tsp. salt

1/4 tsp. pepper

  2 cups milk

Instructions: In a saucepan, melt butter on low heat. With a whisk, blend in flour and salt and pepper.

Cook on low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk.

Place back on burner and bring to a boil, stirring constantly. Boil for 1 minute or until slightly thickened.

Enjoy!

As a side note: For those who are gluten free, "gluten free" crackers can be used in place of regular, saltine crackers. For those who are dairy free, a "non dairy" milk can be used in place of regular milk.
