Avocado Toast Recipe
Before I begin sharing about another aspect of health, I thought I’d share a few “plant based” recipes here.
Avocado toast is one of my favorites to make for lunch. This is simple, easy, delicious, and nutritious!
There are different ways to make avocado toast, but here’s how I like to make mine:
Toast one slice of bread. (I use whole wheat bread)
Cut one avocado in half and mash half of the avocado on a small plate.
Spread a thin layer of mustard onto toasted bread, add the mashed avocado, and sprinkle with “everything bagel” seasoning. (can be purchased at a grocery store or Walmart)

Avocado toast is so easy to make and works well as a healthy idea for breakfast or lunch! Adding a cooked egg on top (fried, poached, scrambled, etc.) also works well. (I usually like to make my avocado toast exactly as described above though.)
Side note on eggs: I have not written about eggs on this blog. However, I thought I would briefly mention something about eggs in this post. Though eggs do come from animals (obviously, not plant based!), eggs are in a unique food group. Eggs are neither meat nor dairy. While some debate this, I personally believe eggs have nutritional value. (and they pair nicely with avocado!)
